GoWild Recipe: Turkey Fried Rice


- 6 teaspoons vegetable oil, divided
- 2 eggs
- 1 small bell pepper, chopped
- 1 Jalapeno finely chopped
- 1 half turkey breast, diced
- 1 cup pineapple, chopped (optional)
- 1 small onion, chopped
- Soy sauce, as needed
- 2 carrots, sliced
- 2 cups cooked rice any type (white, brown, wild)
- 1 cup broccoli florets
- 1/8 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
Directions
Ensure you've cut your turkey into small cubes—don't leave any large chunks. Heat a really large skillet, or a wok if you have it. Add 2 teaspoons of your oil. Add pepper, onion, carrots and broccoli florets. Cook until crisp, yet tender. Remove, and set aside. Add 2 more teaspoons oil to wok. Add eggs, scramble, remove. Add remaining oil. Add turkey breast, and stir-fry until cooked, about 10 minutes. Add soy sauce to taste. Return vegetables and eggs to wok. Add rice and additional soy sauce, as desired. Mix thoroughly and serve hot.

Add remaining oil. Add turkey breast, and stir-fry until cooked, about 10 minutes. Add soy sauce to taste (remember—soy sauce's salty taste varies per brand so tread lightly). Return vegetables and eggs to wok. Add rice and additional soy sauce, as desired. Mix thoroughly and serve hot.
