When it comes to Backstrap, cooked like a steak is probably my favorite way. Second would be to cube it up into tiny pieces and make steak tacos out of it (my kids favorite). Third would be fried with gravy.

I like to cut it into inch thick medallions then pound them out, bread them and deep fry to make great tenderloin sandwiches.
