    Why the black walnuts too?

    Because you can make syrup from black walnut sap. Tastes nearly identical to maple syrup. If you put them side by side you get a hint of difference, to me the walnut is a bit crisper than the maple.

    @Rowdy I didn’t know it until a couple years ago I did some research because we are covered up with huge black walnut trees and I wanted to see if something could be done it’s more work than maple syrup but I found a shop online that was selling the stuff $35 for 5 ounces. That’s nearly $900 a gallon. So far we have just given it away to friends and family.
