    @Arne thanks! 8 hours in the smoker at 200° and then 9 hours in the roasting pan after a week in the brine. Went great with my eggs at breakfast🤤

    @Mike so in that order? First you smoked it then brined it then the roasting pan? Or the brine for a week came first?

    @Gerald the week long brining came first. 1lb of brine salts per gallon of water, (3), then smoked, then the roasting pan. I just used a ham brine from the butcher shop and added peppercorn and picking spices. The pickling spices are what I’ll cut back on next time.

    @Kevin the brine helps to seal in moisture, and I draped it with bacon while it was in the roaster

    @Joe bone in.. the brine didn’t quite fully penetrate so the next one I try will be bone out. The flavor is amazing though

    @Joe 👍. I’m wondering if it would’ve penetrated more if I’d brined it for a few more days, but honestly, boning it only takes a minute. I will throw the bone on the smoker and in the pan though.
