@Dwayne Towles and @Brad Luttrell i am also interested to see how the flavor is. I imagine since this bear was eating a lot of acorns and the Colorado bear was eating a lot of berries, they will taste different.

Not sure if this is cooking or DIY, but this afternoon I rendered down some of the fat from @Brad Luttrell's bear from Virginia and made some beautiful bear grease. 

This bears fat rendered down into a very clear grease. The grease from my bear from Colorado was darker and much more amber. Very cool to see how it all renders down differently. 

Ended up with 4 and a half, half pint jars and I still have a lot more fat to go!
