    I like it. Use it all. You may also want to consider after you get the bones and fat removed cooking it down till it’s like aspic. Then chill it in the fridge in a shallow pan. Then cut it into small cubes. Spread the cubes out on a sheet pan and freeze. Then put the cubes in a freezer bag. Use when you’re making soup, chili etc for extra flavor.
