    @Eddie good eating. I would compare them to a snapper or grouper in taste and consistency. White flesh, sweet to the taste with very little oil. Unfortunately, they have a limit on them in Florida. You can only keep 2 and one has to be above 17 inches and one below 17. I can’t speak to other areas of the Everglades but they were loaded where I was. Very aggressive fish that simply do not wear out like largemouth bass.
