    I cut mine up and vacuum seal everything as soon as I can. Especially if it’s warm out. Usually within 2-3 days. I’m interested to hear what others say about this.

    It all depends on how cool it is and how much you are willing to trim off but you can age it quite a while if you have the right conditions.

    I like hanging for about a week if the temps allow. I also like to leave the skin on so you don’t have to trim as much when you go to butcher. I’m sure the moisture content doesn’t fall as much but I think it’s worth the trade off with not having to trim as much meat off

    I skin and let hang outside if I can. Weather needs to be <40 degrees. Minimum of 24 hours if I can.

    If temps allow I like a week. If not I use an old fridge in my garage and let it set a couple of days before I work it up.
