    Which recipes for the Axis & fallow or your own blend? TIA

    @Gabriel I use a blend of Kosher salt, sage, granulated garlic and Montreal steak seasoning all done to our taste. Which is heavy sage and garlic. We usually cook some before with finish to check the taste. Also we grind everything twice.

    Never had axis and fallow, how does it stack up to whitetail?

    @Mike axis and fallow are more like elk. Rich and finely textured. Like whitetail but intensely better.
