1. clean it up- cut all the valves, tendons, hard fat off your heart
2. Simmer in a covered pot with any and all seasonings and spices for 3.5-4hours. Make sure it stays completely covered in water
3. Slice thin starting at the small end
4. Finish how you would like, I heated the slices through in a pan with sauteed mushrooms onions and peppers. You can also put it in a sandwich or top on BBQ pizza.
