    This is something I have been wanting to try just have never made the leap. If you were gonna give a complete beginner some advice what would it be?

    Grab a high mountain kit , get a meat scale , do three pounds worth, grab you some smoke house casing “they are small like these pictured “, grab you a harbor freight grinder, a handful of pork back fat or unsalted belly fat , use their ratio table on the seasoning for meat fat cure etc..,, get a cheap stuffer of Amazon, case it up let it sit overnight and cure, then get you a smoker electric or otherwise, a digital probe , gently bring it up to the recommended internal temp then arrest the cooking process in a ice bath , pull them out pat them dry let the rest then go nuts
