    It’s about 1 lb of goose breast, with some pot fat added to make an 80:20 mix. Sometimes I use bacon. Chopped onion, some chopped apples, salt pepper Worcestershire sauce. I usually make smash burgers because they hold together better then on a grill…. I don’t go super rare with these since they have pork. Then just whatever you like on a burger! Probably my favorite thing to do with a Canada goose.

    The duck fat fries are just oven fries coated in rendered duck fat, some salt and baked at 425.
