@Greg I used the brining and smoking instructions here https://honest-food.net/smoked-trout-recipe/ and the rub here https://www.foodfidelity.com/smoked-trout/. I could only find fillets, no whole fish, so I only smoked them for about 2 hours. It was easy and so full of flavor!
