This may be sacrilege to all the hardcore smokers out there…but I sous vide’d a brisket and it was amazing.

I cut a 4 lb brisket in half, applied some Hardcore Carnivore rub and put it in the sous vide for 24 hours at 155. Went straight into an ice bath, then smoked it at 300 for 3 hours on the Traeger. It is fall apart tender and the smoker added a great bark.

Also on the tacos - I baked some tomatoes, garlic and jalapeños and made salsa that I smoked for an hour with the brisket. Also made some spicy street corn, pinto beans, and pickled red onion and jalapeños. Damn it was good.
