I usually render the fat off my brisket trimmings. I cover the brisket in the rendered fat when I wrap it. I have never jarred it after the cook but I am probably going to try it at some point.

@James you just boil it in a normal pot? I’ve never done this. Love your idea though that’s money.

@Brad I usually put it in a tin or cast iron pot right in the smoker with the brisket when I start the cook, and during the cook go out a few times and pour out the renderings into a jar. Put the fat back on the smoker and let it keep going and repeat the process.

Chunk it up in small pieces or grind it. You don’t want it to boil. Just simmer it until its all liquid stain it and keep heating until it is clear and all the water has evaporated out then you can pour it into jars.

Low and slow when you’re rendering the fat. I’m not sure if it’s a must, but I strain it through a coffee filter to get all the little pieces out or the tallow can spoil faster.
