    Beaver is a highly underrated meat. The mountain men loved it during the early 19th century. They’d trap em for the pelts but would cook up the meat-and tail. The tail is like pork belly. Yum.

    @Corey totally agree. It’s got good texture and a nice red meat color. Absolutely underrated.

    @Elva to me the texture was like beef but very juicy. I cut off a lot of fat cause I didn’t want a strong wood taste in the meat. Doing so I was a little worried that it would be dry so I cooked it in butter and bacon grease but i think that I didn’t even need the bacon grease because the meat was already juicy.
