Sounds good, but (and this is no indictment against you) I wonder how many people over rely on the bacon wrap when prepping wild game fare. ersonally, I’ve enjoyed duck cooked “regular” but haven’t cooked it myself.

I score the skin on the breast to render the fat down, then I sear it in a pan and then put it in the oven for a few minutes. And eat it like a steak medium rare.

@Nicholas in regards to duck, probably a lot! We’ve tried cooking it so many other ways and haven’t enjoyed it. So if adding bacon makes it better, I’m all for it. We shoot a lot of ducks and my goal is to eat what I kill. And I like duck hunting!

saltwater brine overnight, let rest out of the fridge to get closer to room temp then seared on a screaming hot cast iron until medium. it lays a nice bark and tastes like a steak! you can also pound flat or run it through a cuber and do a saltwater brine and make country fried steak! the saltwater brine is a must
